1 cup butter or margarine
2 cups sugar
4 eggs
2 squares unsweetened baking chocolate, melted
1 tsp vanilla
1 cup cold mashed potatoes
2 cups sifted flour
1 tsp baking soda
1 tsp salt
¾ cup sour milk or buttermilk
Cream together butter and sugar. Beat eggs into sugar mixture one at a time. Add melted chocolate and vanilla; mix until well blended. Stir in potatoes. Sift together flour, baking soda, and salt. Add flour mixture to chocolate mixture alternately with sour milk, mixing well after each addition. Pour into 3 greased 9” baking pans or 1 9” tube pan. Bake at 375°; 20 minutes for square pans, or 1 hour for tube pan. Remove from oven and allow to cool Remove from pans. Frost with favorite frosting.
