4 ½ cups sugar
1 cup cornstarch
2 tsp cinnamon
¼ tsp nutmeg
1 tsp salt
10 cups water
3 TB lemon juice
2-3 drops yellow food coloring
5-6 lbs sliced raw apples
Mix sugar, cornstarch, cinnamon, nutmeg, and salt together in large saucepan. Add water; cook and stir until thick and bubbly. Add lemon juice and food coloring. Pack apples into clean jars, leaving 1 inch head space. Pour juice over apples. Process 20 minutes for quarts. Makes 7 quarts.
