CRUST:
1 1/4 c. graham cracker crumbs
2 T. sugar
3 T. butter or margarine
CHEESECAKE:
2- 8 oz pkg cream cheese (room temp)
1-3 oz pkg cream cheese (room temp)
1 c. sugar
¼ tsp. vanilla
2 tsp. grated lemon peel
3 eggs
Mix crust ingredients and press into 9" springform pan or 9" square tin. Bake at 350°
for 8-10 min. Cool.
Beat cream cheese gradually, adding sugar until fluffy. Add lemon peel & vanilla. Beat in eggs one at a time. Pour over cooled crust.
Bake 1 hour at 300° or until the center is firm. Cool & add topping. Chill at least 3 hours before serving.
TOPPINGS: Pie fillings, strawberries (mashed, sweetened and thickened) or sour cream.
