Yummy for the holidays! Even people who don’t like eggnog like this holiday pie!
1 teaspoon unflavored gelatin 1½ tsp real vanilla
3/4 cup sugar ¼ tsp almond flavoring
2 tablespoons cornstarch 1 cup whipping cream, whipped
1/4 teaspoon salt 1 pie crust, baked
1 cup milk nutmeg
3 egg yolks, slightly beaten
Blend gelatin, sugar, cornstarch, and salt thoroughly in a sauce pan. Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil 1 minute. Remove from heat.
Stir mixture into 3 egg yolks, slightly beaten. Return mixture to sauce pan and bring to just boiling, stirring constantly. Remove from heat. Add vanilla almond flavoring. Place pan in cold water.
When mixture mounds slightly when dropped from spoon, fold in cream. Pour into pie crust and sprinkle with nutmeg. Chill.
