Mom said this was another favorite of ours that she used to make all the time when we were little.
1½ cup hot water 1 tsp soda
1 cup quick cooking oatmeal 1 tsp nutmeg
1 cube butter or margarine 1 tsp cinnamon
2 eggs ½ tsp salt
1 cup brown sugar 1½ cup flour
1 cup white sugar 1 tsp vanilla
Pour the hot water over the oatmeal. Add the butter or margarine to the mixture and let stand until it melts. It may need to be stirred. Add eggs, brown sugar, white sugar, soda, nutmeg, cinnamon, salt, flour and vanilla, beat until combined. Pour into 9x13 greased oblong pan. Bake at 350° for 40 minutes.
While cake is baking prepare topping by combining:
6 T butter or margarine ½ cup milk or ¼ cup canned milk
¾ cup white sugar ½ cup chopped nuts
1 tsp vanilla 1 cup coconut (if desired)
Cook these on the stove until it comes to a boil. Pour the hot topping over the cake just when it comes out of the oven. Serve warm.
