¾ cup margarine
1½ cups sugar
1 cup ripe mashed bananas
1 tsp vanilla
3 egg yolks, unbeaten
3 tsp baking powder
3 cups sifted cake flour (or 2¾ cups all-purpose flour)
1½ cups milk
2 tsp vinegar
1 tsp baking soda
3 egg whites, beaten until stiff
Combine butter and sugar. Blend in bananas; add egg yolks. Sift flour and baking powder. Combine milk, vinegar and soda; add to sugar mixture. Fold in egg whites.
Bake at 375° for 30-40 minutes.
